When you are at the festival, every taco, elote, and churro comes straight from the hearts and kitchens of Latino-owned food trucks and restaurants. No cultural shortcuts. No watered-down menus. Just real Latin food, made by real Latin hands. We’re proud to uplift local Latino chefs who bring their abuela’s recipes, regional traditions, and fun modern twists to every bite.
And while Latin cuisine takes center stage, you’ll still find some non-Latin eats from local favs who stick to what they do best — serving up their amazing bites.
Since 1979, El Burrito Mercado has been a cornerstone of Minnesota’s Mexican community — from fresh masa and vibrant chiles to their legendary summer elotes. What began as a small family market in St. Paul has grown into restaurants, a deli, a food truck, and more, all while keeping the Silva family’s traditions alive.
From tacos and elotes to sizzling burritos and perfectly spiced menudo, every bite is made with authentic recipes passed down through generations.
